Recipe for a healthy and easy holiday dessert.
The holidays are a time to splurge a bit when it comes to food! But who says you can’t have it all?
This confection is delicious, healthy and something unique for a party or gift. It is sweet, satisfying and chewy. I’ve been making it for years and it never fails to please!
Apricot Snow Balls
- 1 pound dried apricots
- 6 tablespoons honey
- Juice from 2 oranges
- 1 cup grated orange rind
- 1 cup unsalted sunflower seeds, toasted and chopped
- 1 cup coconut meal
- Grind the apricots in a food processer. Add the remaining ingredients EXCEPT the sunflower seeds and coconut.
- Cook for 10 minutes over medium to low heat, stirring constantly. Add the sunflower seeds.
- Cool and shape into 1 inch balls. Roll in coconut. Store in refrigerator.
- Share and enjoy!
